- 1 Bunch of kale (about a half a pound)
- 1 Lemon, juiced
- 1 tbsp. olive oil
- ½ Red onion, sliced
- 4 Cloves garlic, minced
- ¼ Cup sliced, roasted pine nuts
- ¼ Cup water
- Salt to taste
I purchased some kale at the farmer’s market this weekend and decided to make a simple side dish from it. Kale is great because it is really high in Vitamin K as well as Vitamins A and C.
In a large pot, sauté onions and garlic in a tablespoon of olive oil for about 5 minutes on medium heat. Add chopped kale into the pot along with water and lemon juice. Cover with lid and let steam for about 5 minutes. When the kale is fork tender (a fork can easily slide through it) and bright green, add the salt and nuts. This fresh, simple dish goes great as a side to any meal.
